Pinch of sushi with a fruit twist: UW food science team nabs 2nd place with its concoction

Ten University of Wisconsin-Madison students settled on fruit and rice as key ingredients. Their creation, sushi with a striking resemblance to a maki roll, nabbed second place in the biggest student product development competition this summer.

Dairy Judging

Mercedes Brighenti, a graduate student in Dr. John Lucey's laboratory won the first prize in Ice Cream tasting at the National Dairy Judging Competition held in Chicago. Mercedes also placed third in the overall taste judging of all dairy products.

Congratulations to the Almond Innovations team for making it to the final round in this year's competition !!!

The 8 member team captained by Sivaraj Kaliappan has made it to the final round of Almond Innovations. The team members include Laura Shumow, Mercedes Brighenti, Sofia Erazo, Qin Ren, Willyn Syarif Tan, Wiparwee Sakaorattankal and Aaron Fuchs. Their product was a delicious and healthy bite sized frozen snack that entwines low fat ice-cream, tasty almond cake, scrumptious chocolate, slivered almonds and crispy almond wafer.

Food Science Club members win prestigious national product development competitions
The 13 member product development team chaired by Rachel Ann Prososki won the Almond Innovations contest organised by the Almond Board of California as well as the product development competitions organised by the Institute of Food Technologists (IFT) Student Association. Anupama Dattatreya and Brad Bolling win IFT Graduate research poster competitions
Anupama Dattatreya
a third year Phd student from Dr. Scott Rankin's group won the first prize in Graduate Poster Competition in the Dairy Foods Division, IFT, 2005. The poster was titled "Role of pH history on the browning potential of sweet whey powder".Anupama's PhD research is on "Characterization of sweet whey powder- functionality, flavor and color". She has done her Masters in Food Technology from the Center for Food Technology, India

Brad Bolling a PhD student from Dr. Kirk Parkin's lab won the third prize in the Graduate Poster Competition held by the Food Chemistry Division at the IFT annual convention. There were 80 other entrants in this competition. He is also a member of the winning product development team. Brad was also named an honored student for 2004-2005 by American Oil Chemists Society (AOCS) as special recognition of his academic studies and research.

Chinthu Udayarajan wins the ADSA Graduate paper competition
Chinthu Udayarajan won first prize in this year's graduate research paper competition held by the American Dairy Science Association (ADSA) at Cincinnatti in July. Her oral presentation was on the " Effect of Calcium and Moisture on rheological and melting properties of Mozzarella" She is a doctoral student from Dr. John Lucey's group and is also the webmaster and newsletter editor for the food science club

Dr. Richard Hartel, the foodscience club advisor received the Timothy L. Mounts award at the 2005 annual American Oil Chemists Society (AOCS) meeting
